Breakfast Toast Two Ways

Believe it or not, I’m super lazy in the morning. I rarely wake up and cook a full on breakfast. But I still want something hot, healthy and delicious. Enter this Breakfast Toast Two Ways.

It’s super easy to make and doesn’t skimp on flavor. You likely have everything on hand already so there’s no need for a special trip to the grocery store. And not to mention, it comes together in less than 15 minutes.

In this recipe, I use BermyFresh hummus, one of my favourite Bermuda brands. Their varieties of hummus are imaginative and delicious. The hummus really made this toast. I would suggest using your favourite flavoured hummus here since the ingredient list is so small. Make sure it’s good quality and try not to pick plain hummus unless that’s all you have at home.

Breakfast Toast Two Ways

Easy, delicious and healthy broeakfast toast using ingredients you likely have at home.

Ingredients

  • 4 slices of your favorite bread, I use sprouted sourdough
  • 1 large ripe avocado
  • 1 tbsp olive oil
  • 1/2 lime, juiced
  • 1 tsp sea salt and pepper, each
  • 2 tbsp your favorite hummus
  • 1/2 small onion sliced
  • 2 large handfuls baby spinach
  • 1 clove of garlic, minced
  • 1 tbsp crumbled feta cheese, optional
  • 1 tsp hot sauce, options

Instructions

  • Prepare the avocado mash. Slice the avocado around lengthwise and twist to open it. Slice the avocado flesh and spoon it out into a bowl. Add the lime, olive oil, salt and pepper and mix together while leaving some avocado chunks. Set aside.
  • Heat a small skillet to medium high and when hot, spray with cooking spray. Add the onions to the pan and cook for about five minutes. Add the spinach and garlic and sautéed until wilted. Season with salt and pepper. Set aside.
  • Toast the bread to your preferred darkness. When toasted, top two pieces with the avocado mash. Add one tablespoon of hummus to the other two slices then top with spinach mixture. Divide the feta on top of the spinach mixture. Add a few drops of hot sauce and a few grinds of black pepper. Eat immediately.
