Meal Prep: Sheet Pan Edition

While I love to cook, I’m also a busy mama of two. That means I generally don’t have time to be in the kitchen for hours slaving over a meal. I like my dishes to have a max or 10 to 12 ingredients and be done in about 30 minutes or have mostly inactive cook time.

I also need to my food to be healthy because I feel better when I’m eating healthy, whole foods. I’m less bloated and have more energy. I also want my kids to eat nutritious foods. It’s a tall order but not impossible.

One of the things I do every single week is meal prep. I always prepare my lunch for the week with a recipe that makes four servings. And I generally will cook a pot of chili or stew and roast some veggies for other dishes throughout the week.

This sheet pan meal prep is the perfect thing to make when I don’t have a lot of time but still want to make sure I have healthy food to eat during the week. It takes less than 10 minutes to chop the veggies and sausage and about 30 minutes in the oven.

I use sweet potatoes but you can use regular if you prefer or even butternut squash. Also, switch up the veggies to whatever you prefer. And if you eat meat, try chicken sausages instead of the veggie ones. Let’s do this!

Meal Prep: Sheet Pan Edition

A quick and easy way to meal prep for lunch or dinner.

Ingredients

  • 4 Your favourite vegetarian sausages, such as Field Roast or Beyond Meat
  • 2 medium sweet potatoes
  • 1 head of broccoli
  • 1 zucchini
  • 1 tsp sea salt and pepper
  • 1 tsp vegetable seasoning
  • cooking spray

Instructions

  • Preheat the oven to 400 degrees. Spray a sheet pan with cooking spray and set aside. 
  • Peel and chop the sweet potatoes into bite-size pieces. You should get about two cups. Place potatoes on sheet pan and season with salt, pepper and seasonings. Spray with cooking spray and bake for ten minutes. 
  • While the sweet potatoes are roasting, chop the broccoli into florets and slice the zucchini into half rounds. Finally, slice the sausages on the bias. 
  • After ten minutes, take the potatoes out of the oven and add the veggies and sausage. Season the veggies with salt, pepper and seasonings and spray with cooking spray. Add the sausages to the pan as well. 
  • Bake in the oven for 20 minutes or until the veggies and tender and the sausage is cooked through. Divide the veggies, potatoes and sausage into four containers for lunch or dinner.
