Meal Prep: Sheet Pan Edition

A quick and easy way to meal prep for lunch or dinner.

Ingredients

  • 4 Your favourite vegetarian sausages, such as Field Roast or Beyond Meat
  • 2 medium sweet potatoes
  • 1 head of broccoli
  • 1 zucchini
  • 1 tsp sea salt and pepper
  • 1 tsp vegetable seasoning
  • cooking spray

Instructions

  • Preheat the oven to 400 degrees. Spray a sheet pan with cooking spray and set aside. 
  • Peel and chop the sweet potatoes into bite-size pieces. You should get about two cups. Place potatoes on sheet pan and season with salt, pepper and seasonings. Spray with cooking spray and bake for ten minutes. 
  • While the sweet potatoes are roasting, chop the broccoli into florets and slice the zucchini into half rounds. Finally, slice the sausages on the bias. 
  • After ten minutes, take the potatoes out of the oven and add the veggies and sausage. Season the veggies with salt, pepper and seasonings and spray with cooking spray. Add the sausages to the pan as well. 
  • Bake in the oven for 20 minutes or until the veggies and tender and the sausage is cooked through. Divide the veggies, potatoes and sausage into four containers for lunch or dinner.
