Spiced Roasted Cauliflower

Whole roasted cauliflower is a trend in the plant based world right now. I tried it. It’s good, but it’s not better than roasted cauliflower florets, in my opinion. Roasted cauliflower is like crack to me. When you season it just right and roast it at the perfect temperature for the perfect amount of time, it’s so delicious.

Cauliflower is extremely underrated. I’ve always loved and it now that I’m older, I enjoy finding various ways to cook it. You can fry it, roast it, steam it, sauté it, add it to a gratin, rice it and much more. But roasted is my favourite.

Today, I’m sharing with you an easy spiced roasted cauliflower, which is the perfect side dish or you can serve it on top of a green salad. Let’s do this!

Spiced Roasted Cauliflower

  • One head of cauliflower (chopped into florets)
  • One tablespoons olive or coconut oil
  • 1/2 teaspoon of the following spices: curry powder (onion powder, harissa powder, garlic powder, cumin)
  • one tablespoon honey
  • salt and pepper to taste
  1.  Preheat the oven to 425 and spray a baking tray with cooking spray.

  2. Mix the spices together with the oil and honey. Add salt and pepper, starting at 1/2 teaspoon each.

  3. Toss cauliflower in this mixture and spread in an even layer on the baking tray.

  4. Put tray in the oven and bake for 25 to 30 minutes, turning the cauliflower halfway through.

  5. Take cauliflower out of oven. It should be golden brown and crispy.

  6. Plate it up and enjoy!
